I will have a Wing Console with SoundGrid card to create the SoundGrid network. Is it possible to connect 2 computers to the SoundGrid network (using network switches) and pick up the audio (unprocessed) from the Wing Console to route into a DAW - like how a Dante network would work. Is this possible with SoundGrid?

Yes, this is possible.
To create this setup, you will first need a SoundGrid application (SuperRack SoundGrid/eMotion LV1) to manage the network, there, in the inventory page, you assign your I/O devices - for example, Wing IO, DAW computer #1 and DAW computer #2. Then, create the patches in the Patch > Device to device section (Wing > DAW computer 1 & Wing > DAW computer 2).
This is a very simplified explanation - a lot depends on the SoundGrid application you use and the specific use case.
